Caramel Balls

Bella and Mummy in Our Neverland Kitchen making Caramel Balls. It’s such a simple treat to make, she’s only 6 so telling her dates are Caramel in its raw form, I figured is ok right 😜


Shopping List:

  • Almonds about 50g
  • Macadamia nuts about 50g
  • Brazil Nuts about 50g
  • Fresh dates, de-stoned around 8-10
  • Coconut Syrup, Raw honey or Organic Rice Syrup – 1 tablespoon
  • Coconut oil 1 or 2 tablespoon


Instructions for Thermomix users:

  • Place all nuts or half of the nuts into the mixing bowl and Blitz for 10sec/speed 9 WARNING it’s loud!
  • Another option is to add the remaining nuts, speed 5 for 10 seconds to create a crunchier consistency.
  • Add dates into the bowl and chop 10sec/speed8. Make sure you scrape down the sides of the bowl.
  • Add coconut syrup and coconut oil (enough so it lets you form balls with the mixture) and mix 5 sec/speed 2.
  • Look at the consistency of the mixture, you don’t want it to be too oily. Add more nuts to reduce oiliness from the coconut oil.
  • Roll mixture into balls and place in a freezer safe container for about 45 minutes. Consume at your leisure

Instructions for Non Thermomix users:

Use a good quality food processor to mill the nuts, chop the dates and blend all the ingredients together.

Variation Tips

Try using different nuts, dried fruit, organic oats or 2 teaspoons of Cacao powder to achieve different tastes. You could also coat the balls in desiccated coconut, before placing in the freeze.

Another option is not using the syrup to sweeten, I occasionally add a good quality white chocolate grated into the mixture too. Thermomix users Speed 5, 5 seconds.
