Cauliflower Rice

INGREDIENTS

  • 500g Cauliflower
  • 1 brown Onion
  • 1 tablespoon of vegetable stock concentrate or one stock cube.
  • 1 Tbsp of Coconut oil or 25g of butter x 2 for non Thermomix users

 

DIRECTIONS

Thermomix

  •  Cut the onion in half, remove the skin, and don’t remove the ends till the last minute to reduce teary eyes!!
  • Quarter the onion and Place in Thermomix, Speed 7, 3 seconds.
  • Add coconut oil. Varoma Speed 1, 3 minutes. Place in a bowl and set aside.
  • Cut Cauliflower into small florets then add to your Thermomix. Speed 5, 5 seconds. The cauliflower should look like rice grains.
  • Tip chopped Cauliflower into the Steam basket and add onions on top.
  • Add 500g of water to the bowl and your stock.
  • Place steam basket into the bowl and place the lid on.
  • Varoma, Speed 3 for 12 minutes.
  • Best served mixed with a sauce.

Non-Thermomix users

  • Cut the onion in half, remove the skin, and don’t remove the ends till the last minute to reduce teary eyes!!
  • Finely slice the onion, add to a frying pan and sauté till soft in a Tbsp of coconut oil. Place in a bowl and set aside.
  • Cut Cauliflower into small florets, in 3 batches, place the florets into a food processor and pulse until the mixture resembles rice.
  • Medium Heat a large skillet with 1 Tbsp of coconut oil, add Cauliflower and onions.
  • Cover skillet for about 5 minutes on a medium to low heat until the rice is tender.
  • Best served mixed with a sauce.

Served mixed with Neverland Tomato and Orange Sauce and Neverland Orange and Tomato Meatballs. You can also serve as Stuffed Bell Peppers. Use the Neverland meatballs mixture, just don’t make the mixture into balls, sauté  on a medium heat in a pan with 1 Tbsp of coconut oil till browned then cover and simmer for 5 minutes. Add sauce and rice and cook on a low heat for 15 minutes. Slice off the top of each pepper and clean out and wash thoroughly. Place each pepper/capsicum on a baking tray and spoon in the mince and cauliflower rice mixture into the hollowed-out capsicum’s. Cover with tented foil and bake for 45 minutes or until peppers are tender, 180 degree heat.

Peppers are the same as Capsicum’s.
