Citrus Lamb Cutlets with Sweet Potatoes and Apple



Serves 4 to 6

Side Dish


  • 3 medium Sweet Potatoes, quartered
  • 3 Medium Pink lady Apples, quartered
  • 7 to 8 Garlic Cloves
  • Fresh rosemary 4 or 5 sticks, you can used dried 2 teaspoons
  • 1 tablespoon of coconut oil
  • Salt to taste


Lamb Cutlets


  • Spring Lamb (0.383 net Kg per packet ) x 3 around 3 cutlets each
  • I large Orange
  • 1 nutmeg
  • 2 tsp dried sage or a handful of fresh sage
  • 2 teaspoons of All Spice
  • Salt to taste
  • 1 or 2 tablespoons of coconut oil


  • Steamed Broccolli for all eaters



  • Preheat the oven to 180c
  • Place the Sweet Potato and Apple in a snap seal large bag and add coconut oil. Seal and toss to evenly coat.
  • Place the Sweet Potatoes and Apple, in a baking dish. Add Whole but skin less garlic cloves.
  • Bake for 45 minutes or until the Sweet potato is caramelized.
  • While the Potatoes are cooking you need to flavor your lamb.
  • Juice your orange, set aside
  • You need to get the zest from your Orange. A few options;
    • Cut the skin off the Orange and place in your Thermomix for 10/20 seconds, speed 10. Scrape down the sides of the bowl and repeat if needed, set aside.
    • Grate the skin of the orange using a fine grater
  • Grate 1 nutmeg or add 3 teaspoons of ground nutmeg
  • Place your Orange zest, Nutmeg, Sage and All spice into a snap seal large bag, add cutlets. Seal and rub in to evenly coat to flavor your cutlets.
  • In a large frying pan heat 1 or 2 tablespoons of coconut oil on a high heat.
  • Place as many cutlets as you can in the pan.
  • Cook for 4/5 minutes on each side, depending on how you want them cooked. This should have them a little pink in the middle.
  • Then place a lid on for a further minute to ensure cooked through.
  • Once cutlets are cooked removed from the pan to a plate to rest for 5 minutes.
  • Steam Broccolli for 5 minutes till cooked
  • Add orange juice to the pan with the lamb juices on a low heat for 2/3 minutes, stirring so it can reduce to a marinade for the cutlets. Add any juices from the plate the cutlets were resting on.
  • Plate up your sweet Potatoes, apples and broccoli with your cutlets and drizzle on marinade.


Running behind tip:

Once you’ve chopped your sweet potato into smallish squares, add to a bowl of cold water cover with a plate and put in the microwave for 5 to 8 minutes, before putting in the oven as this will half the cooking time needed to caramelise them in the oven. Don’t forget to still add to the snap seal bag to coat in coconut oil, before placing in your baking dish.
