INGREDIENTS
- 2 to 3 Chicken Thighs or Legs per person
- 2 or 3 tablespoons of coconut oil
- ½ cup of Organic Coconut Amino Sauce or Organic Tamari or Soy Sauce
- 2 tablespoons of Neverland Tomato Sauce
- ¾ cup Organic Rice Syrup
- 2 or 3 Garlic Cloves
- Salt to taste
DIRECTIONS
- Preheat the oven to 180c
- Place the garlic in the Thermomix bowl and chop 3 sec/speed 7 or finely chop.
- In a medium jug, combine the Coconut Amino sauce, rice syrup, coconut oil, tomato sauce, garlic and salt. Stir well to mix.
- Place the chicken in a snap seal large bag and pour the marinade over the top. Seal and toss the chicken to evenly coat. Marinate for at least 30 minutes.
- Remove the marinated chicken from the plastic bag, reserving the remaining marinade in the bag. Place the marinated chicken, in a baking dish. Pour the marinade from the bag over the top of the chicken.
- Bake for 1 hour or until the chicken is caramelized.
- Allow the chicken to rest for 5 to 10 minutes. Spoon the dish juices over the top of each chicken piece before serving.
Serving Suggestions:
We normally eat ours with green vegetables steamed, sweet potato mash or throw in quartered sweet potato pieces under the chicken and I have been known to add apple pieces quartered to my chicken mixture. You can of course just eat them on their own they are great for feeding the kids at a party as they can walk around eating the chicken legs.
Alternative ingredients or amounts
3 to 4 tablespoons of Organic Rice Syrup
1/2 a large orange juiced
4 or 5 chopped Tomatoes or 3 Tbsp of tinned diced Tomatoes
1 Apple chopped
1 Tbsp of Organic Apple Cider Vinegar
Play with the ingredients and don’t get stuck on amounts as my kids often end up adding more than I planned and it still turns out yummy….
