Neverland Tomato and Orange Sauce

  • 1 1/2 tablespoons of coconut oil
  • 1 Medium brown onion
  • 2 garlic cloves
  • 250 g fresh ripe tomatoes
  • 400 g tinned organic tomatoes
  • 6 freshs dates de-stoned
  • 1 Large handful of fresh basil
  • 1 Large orange
  • 1 teaspoon balsamic vinegar (caramelised optional)
  • Salt to taste

Directions

  • If you want to turn your Orange skin to Zest, do this first and set aside. Thermomix users can zest on Speed 10 for 10 to 20 seconds. Alternatively zest using a grater for zest.
  • Place the garlic, onion and de-stoned dates into the Thermomix. Speed 7, 3 seconds. Use a good quality food processor or a sharp knife to finely chop as an alternative.
  • Scrape down the sides of the bowl, add oil to the Thermomix and sauté for 3 minutes/varoma/speed 1. This step can also be achieved in a frying pan on high heat for about 5 minutes.
  • Juice your Orange, if you haven’t used the skin, you can zest and add too…
  • Add Orange juices and all remaining ingredients to Thermomix. Speed 7 10 sec’s and then cook for 15 minutes/100c/speed 1 with the measuring cup (MC) removed and TM basket placed on the mixing bowls lid. As an alternative finely chop all the remaining ingredients (fresh tomatoes, tinned tomatoes, and basil) before placing in the large pan containing the garlic, onion and dates, to cook on a medium heat for 30 minutes stirring as it cooks.
  • Place MC back on Speed 7 for 3-5 seconds to make a smooth sauce.

 

Serving suggestion place on browned meatballs and cook covered for 10-15 minutes. It’s also a great pasta sauce.

Tip if you don’t have tinned tomatoes I have added around 800g of Fresh ripe tomatoes as an alternative.
