INGREDIENTS
- 2 Pork fillets about 275g/325g per fillet
- 1 large Orange
- 3 Medium red onions
- 100/150g butter, softened – 200g if you want juices to coat the pork when served rather than a sauce
- 2 or 3 teaspoons or 1 tablespoon depending on your taste of:
- Ground Cinnamon
- Ground Sage leaves
- Ground Fennel
- 2 Pink lady Apples
- 2 large Sweet Potatoes
- 3 Large carrots
- Salt to taste
- Enough Broccoli per person
DIRECTIONS
- Preheat the oven to 220c
- Quarter your red onions, cut in half, remove the skin, don’t remove ends till the last minute to reduce teary eyes!!
- Parboil your red onions in boiling salted water for about 5 minutes.
- Cut the skin off the orange to zest in a mixer, Thermomix or as you normally make your zest. Thermomix users – Speed 10, 10-20 seconds and juice your orange.
- Place all your ground herbs and orange zest in a bowl with a pinch of salt and mix in your softened butter, and then mix it all up.
- Chop the sweet potato, carrots and apples into 2cm squares as a guide
- Place Sweet Potatoes, apple and Pork fillets in a baking dish and coat in your butter mixture.
- Add parboiled onions
- Place the pork on top of the Sweet Potatoes, onions and Apple and cook for 30 to 45 minutes depending on how you like your pork cooked.
- Take the Pork off the Potatoes and toss the remains in the cooking juices.
- Place the pork back on top and cook for another 15 minutes at 180c until it’s nicely golden.
- Check your pork is cooked to your liking by cutting in the middle of a fillet and checking its colour.
- When your pork is cooked allow it to rest for at least 5 minutes before serving.
- Steam your broccoli for about 5 minutes
- Remove a small amount of juice and Potato, apple and onion and place in a Mixer with ½ cup of water. Thermomix 3 sec Speed 7 to create a sauce. Alternatively add more butter initially to allow a juice marinade to be placed over your pork.
- Leave the rest of the Potatoes etc in the oven with it turned off till you are ready to serve.
- Plate up your sweet Potatoes, apples and broccoli with your sliced pork and sauce and Enjoy….
