Shopping List:

  •  4 Organic Eggs
  • 2 Bananas
  • 6 Dates
  • 100g Organic Oats
  • 200ml Full fat Organic milk
  • Organic Butter or coconut oil– to line frying pan
  • Rice Malt syrup to dress the pancakes – only need a very small amount

Thermomix users:

  • Place oats into the mixing bowl and mill on speed 10 for 20 seconds.
  • Add rest of the ingredients (except Milk), and chop on speed 6 for 30 seconds.
  • Insert butterfly then add milk and blend on speed 4 for about 20 seconds to achieve a fluffier consistency.
  • Using a ladle, a small child’s cup or a large spoon place the mixture into a hot non-stick frying pan (that is lightly coated in butter/coconut oil). Cook for about 1 -2 minutes on each side until golden brown.
  • Serve with butter or rice syrup and fresh fruit or a topping of your liking. I cut them into shapes as well just for fun.

Non Thermomix users:

Use a good quality food processor to mill the oats, chop the dates and blend all the ingredients together.

Variation Tips

Try using 2 teaspoons of Cacao powder to achieve a chocolate taste. Keep left over mixture in the fridge for a healthy, quick breakfast before school. If you don’t have dates you can use 1 Tbsp of Organic Rice Syrup, Raw honey or sweetener of choice. You can also replace the milk component with water.
