White Chocolate and Caramel Ice-cream…..Shhhhhhhh

Shopping List :

  • 2 Bananas
  • 2 large handfuls Frozen or 1 punnet of Fresh Strawberry
  • 1 large handful of macadamia nuts or almonds
  • 10 Fresh dates – remove stones.

Instructions

  • Simply remove the skin of the banana and cut into small slices, place in a snap seal bag and freeze.
  • Repeat the above if you brought fresh strawberries again remembering to slice before freezing.
  • Place both the frozen banana’s and strawberries into the Thermomix bowl. If you have brought frozen strawberries no need to chop just add straight to the bowl. Chop 10sec/Speed 8. Scrape down the sides of the bowl using the spatula.
  • Add the rest of the ingredients, repeat Speed 8 for about 20 seconds or until smooth and creamy. The nuts give the ice-cream crunch (if you use almonds, its like a biscuit crunch, my girls think the macadamias are white chocolate as they have a creamy taste!) and the dates give a slight chewy caramel consistency.

For those of you without a Thermomix, a good quality food processor will be fine, blend until smooth. The consistency you are aiming for is soft serve ice-cream

Eat straight away or transfer into a freeze safe container and freeze. Place amount into the thermomix or food processor and blend when you are ready to eat again as it loses its soft serve consistency when frozen….Enjoy
